Hook, Line and Simple

I eat a lot of salmon, at least two days per week. It necessary to keep variety since salmon is on the menu so often. I found a delicious recipe in my Looneyspoons cookbook by Greta and Janet Podleski of Eat, Shrink and be Merry fame on Food Network Canada. I found this recipe very tasty so I would like to share it with you.IMG_0507

First, please let me apologize for the creepy Nasfartu type shadows of me lurking in the background of my recipe photos as I was taking the shots. Not intentional. The lighting in my kitchen isn’t the best.  Now onto the salmon…..

Hook, Line and Simple Salmon

You will need:

-Fresh skinless salmon fillets. Recipe says six, I made two as it was just Andy and I.

-Season your fillets with generous squirts of fresh lemon juice and sea salt, pepper and a little garlic powder to taste. Set aside fillets in the fridge to marinate:

IMG_1419While salmon is in marinade prepare your dill sauce. You will need:

-1/3 cup light or fat-free sour cream
-2 tbsp pure maple syrup
-1 tbsp Dijon mustard
-1 tbsp freshly squeezed lemon juice
-1 tbsp minced fresh dill (I love dill so I doubled this quantity)
-1 tsp grated lemon zest
-1/4 teaspoon each of salt and freshly ground black pepper

  • Preheat broiler and take salmon from fridge
  • If not on foil on baking dish, spray baking dish with cooking spray before placing salmon on sheet
  • Broil 4 to 6 inches from heat source for about 4 minutes on each side, or until fish flakes easily
  • While fish is cooking, prepare your sauce. In a small bowl, whisk together sour cream, maple syrup, mustard, lemon juice, dill, lemon zest, salt and pepper

  • Remove salmon from oven when done and drizzle with sauce. Serve immediately. I served with sides of sweet potato fries and steamed asparagus. *We had a lot of sauce left over, as I only prepared two fillets. I put it in a container in the fridge and will make this recipe again on Wednesday with spinach salad and wild rice.*
